Why are my breads turning out so craggy on top instead of smooth? I used the lightest crust setting, but it still looks like it’ll be too done. Aaaargh.

Ingredients
- 1 1/3 cups apple juice
- 2 tablespoons orange juice concentrate
- 1 tablespoon honey
- 1 1/2 teaspoons salt
- 1 teaspoon cinnamon
- 1/3 cup diced apple
- 1/4 cup wheat gluten
- 3 1/4 cups whole wheat flour
- 1/2 cup oats (I used quick)
- 3 teaspoons yeast
Directions

Mix in the order recommended by your breadmaker, 1 1/2 lb loaf, whole wheat setting.
