Fostering bananas

Scarcity is my middle name lately, eh? We’ve just had a lot going on and were gone all weekend at a Dave’s Garden get-together in southern Ohio. Monday we did some de-cluttering, organizing and cleaning. I still have dusting and vacuuming to do in our office and bedroom, but I’m finally in the home stretch (thanks to my mother-in-law and her sweet son - thank you both so much!). That said, I’m afraid this entry won’t have any meat on its bones, but it is totally bananas.


I received this microwave bananas foster recipe in a Reader’s Digest Change One newsletter.

Bananas Foster

1 small banana (about 6 inches long)
1/2 teaspoon packed brown sugar
1/2 teaspoon unsalted butter, melted

Slice banana into 1-inch pieces and place in a microwaveproof bowl. Sprinkle with brown sugar and drizzle with butter. Cover and microwave on High until bubbly, about 1 minute.

Per serving: Calories 120, fat 2.5 g, saturated fat 1.5 g, cholesterol 5 mg, sodium 2 mg, carbohydrate 26 g, fiber 2 g, protein 1 g.

I think this would be delicious with a little nutmeg sprinkled on top. Tasty!

  3. Ohh,.. I am going to try this the next time Brian buys bananas. He does not eat them and I usually don’t eat them fast enough (they brown so fast!)
